In general the WRC cars move around about how you'd expect them to, based on what I've seen from real onboard footage. Then, once you get the car sideways a bit, the aero effect dissipates, which also makes sense. Initial turn-in is sharp to the point of almost being twitchy, which makes sense due to the level of downforce they have. The current-generation WRC cars seem pretty good (which they should, since they're the main focus of the game).
#Wrc 8 setups update
Maybe the default setup is just overly conservative I'll have to play with it and I'll update my opinion if warranted. You almost have to use the handbrake to get it loose at all.

The back end should want to carry on straight if you're too aggressive on initial turn-in, but instead it exhibits an almost DiRT4-like level of rear-end grip.

Also, I test drove the Alpine A110, and while it handles great and is easy to drive, I had absolutely no feeling that it's a rear-engined car. It's not as bad as WRC7 but it's still similar. The handling at very low speeds still exhibits the same vagueness as WRC7 the car gets into a condition where throttle position and degree of wheelspin seem to have no effect and the car just has sort of a mushy hovercraft feeling until the speed picks up a little bit again. The physics are definitely a step forward from WRC7, but could still stand improvement. I'm glad they added DirtFish to DR2.0, but the WRC8 test area is much larger and offers a wider variety of challenges. I haven't delved deeply into the career mode yet because I've just spent a while hooning around the test area. The test area is a huge treat, with a decent number of roads and varying surfaces.

The level of immersion reminds me of the recent F1 series games, which is a good thing. The career mode team management and tech tree look great.
